Easy fix! Cut out the totally irrelevant latte art, and you'll gain time in getting the orders done. Just like the so-called haut cuisine, art in food and drink is totally misplaced, food and drink is for consuming, not staring at! I used to work in Genova, Italy, each morning I would stop off at the bar to get my espresso, and there was not a mm of art in it, just great coffee.... and on time!
I love the speed and efficiency but try not to be rough when putting in the portafilter. One little knock and you can displace the puck causing inconsistency. Killer vid!

Wow this guy is amazing! I like how he washes the milk jugs after each coffee. Many places I have been don’t do that and they keep using the same dirty milk jug over and over again and then coffee then taste fowl!
I would get an allergic reaction from using cow milk and oat milk in the same milk jug. Please clean them better in-between use. That's not very professional.
Interesting video. Seems you have been dealt a bad hand with your bar. You should be moving dry to wet but you're having to go back and forth. Also there is no scales to weigh the grind. And worst you're having to tamp by hand instead of having an electric tamping machine to ensure consistency.
