My name is Asami.
I was born and raised in Japan and have over 15 years experience as a pastry chef in both Japan and France.

Besides sharing my skills through online courses and creating new recipes, I have been hired to do consulting. As a consultant, I got the chance to participate in the creation of 2 successful Japanese Cafes, one in Dubai and another in New Delhi.

I am blessed to blend my years of experience as a pastry chef with many rich cultural encounters to now share my passion for baking with my students from all parts of the world.

Tip: Use ghee or clarified butter which has a higher smoke point.

I tried doing this it failed miserably I did everything just as you showed and told and i couldn’t manage to make a single pancake correct it became more like a liquid and when I even tried cooking them it did not turn to anything other than liquid

I tried baking this cake twice. While baking in the oven, it puffed up to almost double the size of the mold. But afterward, it shrank and wrinkled down to a tiny portion inside the mold. Both of my cakes got ruined this way, even though I carefully followed all the steps each time. I’ve lost interest in baking cakes because of all the wasted ingredients and ruined cakes. Could you kindly help me? How can I make sure the cake turns out properly? It shouldn’t shrink down. The spongy part just becomes a small, dense portion. What’s the solution for this?

I've just done this! it wasn't as big as yours, but the texture was definitely fluffy, it felt like eating a cloud, it was absolutely delicious. a great breakfast to start the day

dude these are so good, even if you mess up the batter or cooking them, they're still delicious, i've gotten a pleasantly surprising result my first 2 attempts of making these pancakes

Did you let your butter and milk mixture cool first? I took it directly from the heat like what I saw on your video and it cooked the flour mixture ruining my batter.

Haven't made them yet, really looking forward to trying them. I have mine with either fruit and maple syrup or sometimes streaky bacon and maple syrup. might get some mascarpone cream for this recipe as I think it will just add to it. (Calories too :D)

I honestly believe you use self raising flour because I have done everything exactly the way you explained to the T And they don’t stay risen they shrink instantly

По сути это омлет с сахаром и форму придают лишь взбитые белки. Моя бабушка добавляла еще муку в него,чтобы он был пышным. У меня такие пышные не получились, масса была жидковатой, хотя все хорошо взбила, но скорее всего просто мало сахара и белки быстро опали при перемешивании (перемешивала я тоже акуратно😅)

Every time I make it It turns out amazing But it always shrinks it never stays risen like in the video Are you sure you don’t use self raising flour ?

Self-rising flour is not available in Japan, we could get it at imported grocery stores, but we generally don't use it, I don't use it for baking. Hope your cake turns out better next time:)

I made it and used more than 60ml of milk It was too clumpy and didn’t have the consistency like in the video I used about 90ml of milk The rest was perfect

I'm going to try these this weekend. Very clear instructions, good pacing, no distracting music. But, don't refrigerate your whites after separating the eggs. Egg whites achieve more volume in less time when *not* cold. But, if there was no planning ahead, one of the ways to warm the whites a little: Nest the bowl/container holding the whites into a larger bowl which has previously been filled with very hot water. Prep other things & come back to it. Volume 😃

The recipe is so bad. I just did them according to your instructions, and, you never guess what, they turned out to be totally flat. I hoped for fluffy, beautiful dish ffor my family, but instead I got flat thing. I'm so sad right now, literally disappointed
