by the way in the help section of the game it mentions changing clothes as well as wearing a mask so that’s why you might be getting witnesses and a wanted level even while wearing a mask. it’s because they’re recognising your default clothing. I’d recommend wearing like a duster coat as well as the mask to help conceal Arthur’s identity
Another thing is the gunslinger weapons are always worth picking up as once you get on your horse they’ll be saved on there and can access them at any time so don’t worry about dropping a gun you already have and switching it out for another one
when you’re looking at a horses stats there’s a little ring with like 4 dashes around it and that indicates your bonding level. As you bond with a horse it’s stats will improve. also upgrading a saddle and stirrups will improve things such as stamina decrease rates and health :) Also anything you buy on the saddle is transferable to any horse you get in the future :)
