Can someone clarify why some pronounce this with a sh sound like sheh sheh, like in this video vs those that pronounce it more like syeh syeh? Is it an accent thing?

Great video. BUT: The background music is disturbing! When you try to listen to native speakers, music in the background is the worst thing you can do. It's very important to hear only the voice of the native speaker.
