good job, try wrapping in foil and resting on very low heat in preheated slow cooker for 1 hour, makes it fall off the bone .

I promise if you cook low and slow first the skin will become soft. then crank that heat to 450 and put the belly back in and that crackle will explode out of it. so many people opt to go high first and you can get reasonable results but the quality of the crackle suffers during the low and slow period. Trust me . DO NOT score the skin. moisture will rise up out of the meat and ruin the crackle potential. oil and salt on the skin will give you the chemistry required. cook that baby low and slow then finish it off on high for the crackle. It will be the best crackle ever.

Yes skin was dry. Your best to try and salt the pork belly overnight in the fridge. Wash the excess salt the next day, pat dry add oil and a rub. Start as hot as you can, cook at high temp for around 1-1.5 hours. Then drop the temp down to cook for another 2-3 hours at lower temp. That way you should hopefully have crispy crackling and tender meat.
