I gave your recording from last year a big thumbs up back in 2022, and I am really grateful you took the time to do such a quality recording again this year, as well. It is so enjoyable to watch. As always, I have loved The Ekka. I have attended every day and I love it. It truly is my favourite time of year.
@@brendofirewroks i thought it was definitely more put together, the middle was a bit lacking but was definitely timed better and had more pyromusical aspects. Just needed more actual fireworks and would of made it one of the best!

Looked a bit tough when cutting...If you don't let the meat come to room temperature before grilling, it will always be tough. The meat seizes up when it hits the red hot grill. Looks good though.
you are the only person in RU-vid that I've see that have the coals separated instead of together. This may work for this short cook.. but if you're doing something that requires more time... good luck with keeping them coals hot.
Mac Pelao that's exactly right. It's a short cook. If it's a longer one you'd obviously use more and closer together ( of even an indirect method). Everyone has their own favourite way of grilling. This is what I like.
I'm always trying new ways to grill. Here's my method: I fill my charcoal chimney starter 2/3 full, and dump out some in the corner, leaving the chimney half full. I place one starter cube under my chimney (even with a full chimney, it takes 18 minutes for red hot coals. I've had 100% success.) and place the grill directly on the chimney. 10-12 minutes later, I place the steaks at 10:00 for 20/25 seconds, flip to the other side, inspect and adjust my time as needed, flip back to the original side at 2:00, giving it perfect crosshatch marks. I repeat, pour the burning charcoal on the unlit briquettes, preheat for 10, and bake over indirect heat.

I was wondering, why can't you keep the charcoal in the basket for direct heat grilling? Also, why put in the grate just before the food? Wouldn't you want the grill grate to preheat? Great video, by the way
Hey mate, this is kinda an old video now. You're right, you can certainly keep the charcoal in the baskets and cook over that. I always just find I get a more even hear by spreading them out. And yes it's a good idea to pre heat the grill plate
Not trying to be critical, but I would never use anything but a charcoal chimney to get the charcoal going. Most wholesome way to light charcoal. Briquettes are bound together with starches and a bunch of other additives, and the Jiffy Lighters contain the following: Paraffin, Urea Formaldehyde Resin, Water, Emulsifier, Hydrochloric Acid. I got all this info, by simply Googling. Never expose your food to any of this stuff, no matter how small the amount (the box claims). Lump charcoal and a charcoal chimney, that's all that you need, and you'll have the best steak ever!
