Our family of 5 traded our suburban life to live simply on our 54 acre farm in West Gippsland Victoria, Australia mid 2018. We were lucky enough to set ourselves up to live a self sufficient life just before corona hit. We were 6 months into our self imposed year long challenge only eating what we grew, forage for, barter for also selling our excess produce to purchase pantry staples like spices, grains, coconut products, coffee and chocolate. We were one of the lucky ones, not needing to worry about where our next meal was going to come from.

The digestive issue with sunchokes is inulin. Slow cooking pretty much eliminates the issue. And they are perennial, they just die back above ground over winter. Frost makes the tubers sweeter.
I really enjoyed your cheese making. Many years ago, I was ready to make cheese for the first time, having bought all the gear when I fell and fractured my ankle very badly. My dear husband took over the cooking and house keeping through my 15 week recovery. Many months later I remembered the cheese plan and went to resurrect my cheesy ambition only to find my equipment was nowhere to be seen. It had been moved down to the black hole (the name given to my husbands shed.... what goes in never comes out again). I asked if he could retrieve it for me. Some bits did come back. My thermometer was located in his smoker. The cheese baskets over in the chook wheat bins being used as scoops. My large boiler had been converted into a chook scrap bin outside the back door and "oh the C stuff and calcium stuff that were in the fridge...sorry I tossed them cause they looked old". Alas some 10 years later...the cheese making is now firmly on my bucket list. I retire next year and between now and then I will be buying a fresh lot of everything including a wine fridge plus a label maker, to print KEEP YOUR MITTS OFF stickers to put on everything😂 Thankyou for reinspiring me, it was great to see such a down to earth presentation that showed the reality of a very busy homelife, combined with a common sense approach.
Waste of time , I have yet to see anyone be successful with apple tree cuttings , people show doing the cutting but there never is follow up showing that they took and have successfully got roots , better to buy or grow from seed to get root stock for grafting onto how ever that takes a lot of time , maybe best to just buy your apple trees and safe the struggle.

Back just before Covid I was starting to learn how to become self sufficient, I was typing on RU-vid for homestead, self sufficiency and came across your channel. I’ve watched nearly all of your videos and have learned so much, then got a new phone and couldn’t find you, lol obviously I found them, just wanted to let you know you were a big part of all that I’ve learned so thank you, I’m trying out flower farming along with growing and raising our food, it’s been 5 years now and we love it. Way too complicated. I don't have fruit trees (too cold here), and I don't cook. Never seen chinotto fruit in a US supermarket. My recipe is to mix Classic Coca-Cola and Bigallet China China; that's it. Done in 10 seconds.

Jerusalem artichokes produce a special and quite rare kind of fibre called inulin - "a type of soluble fiber that balances blood sugar, and also acts as a prebiotic." Fartichoke reputation can be addressed by cooking them enough!
