He is the neatest Chef I have seen so far doing bulk cooking. There's no sloppiness during his entire cooking. All ingredients are in, no waste on the sides and on the ground and everywhere. SUPERB. Gloves is Impossible to mix the chicken, spices and coconut milk. Chicken will be marinated well. His hands look clean. I'm sure he is rinsing his hands every time he walks in. Locals eat their food with their bare hands without washing first. They enjoyed their food. That's their culture. Seafoods, BBQ ribs and fried chicken are better eaten with bare fingers. Few people wash their hands before eating. Michellin Chefs arranged the small amount of food on the plate with bare hands. TV cooking chefs don't wear gloves. Baking bread mixing without gloves. I don't wear gloves when I'm cooking. Tons of Spices plus the heat will kill almost 200% even the most lethal germs out there. But the food should be served quick to customers. The place is hot. End product was simply, neatly and unpretentiously presented. I'm sure it's delicious. No wonder it's Famous. All the Best for this Hardworking and Humble Guy. Excellent.
