Hi, on the online visa application from the Nigeria Immigration Service website, it asks for references but the only two options are "employer" and self. Is the employer the person inviting me to Nigeria or is it literally my employer from my job? I'm so stuck on this part and have been searching for help.
If you are applying for a tourist/visitors Visa, it shouldn't be asking for any employer reference. The only reference I had to give was my visa approval reference number or visa acknowledgment number. If it's asking for a persons reference, I just provided an invitation letter from the person who was hosting me in the country.

the UK does however some countries will not allow you - an example being Zimbabwe. But this changed in 2013 where they need it easier to have dual nationality especially if you were born there.
