Hi Chris just FYI you should always just carry like a face towel with you when visiting Philippines . A lot of pilipino carry face towel or handkerchief as a napkin especially in local area . they don’t give paper napkin when eating local food.🙂

That deep fried chicken you ate is called Proben. It's not really a meat nor skin, but an innard(part of stomach). "Proben" came from the English word proven, short for proventriculus.

Yeah, i agree, was thinking exactly the same as you. The guys English was good enough to have an extended conversation with Chris, he understood perfectly well and took advantage of his kindness or/and lack of confidence.
This is probably just verbal reflex, but I cringe when people ask store owners if their food is good. Again, just an observation. I see my Filipino people do it a lot and I guess I notice it with other cultures as well. As if the worker is going to say, no it's not good.
