first of all, they are doing it wrong. Dunkin's boston kreme is no longer made with custard. they cut corners and the kreme is cheap translucent now, likely made with corn syrup, corn starch and water and should have no flavor. 2ndly, they need to make the donuts very small, because again, this is how Dunkin cuts corners.

I'm pretty sure he's got like more than 4 years in school. But it was for Political Science. He was also an athlete. He went to The University of California. He did write a cook book and has done editing, writing and producing in the food column in LA magazine. His producing credits were through Mythical Entertainment. As far as Culinary School goes...nope. Just a freelance cook.

Also my culinary teacher says that you need to whisk things once by hand so you appreciate the machines you use. It was so hard for me to make a normal sized batch, imagine how difficult it is for a bakery glazing probably 1,000s of donuts a day.

I’m pretty sure she meant there weren’t any extruders or conveyer belts or anything like that. A lot of doughnut shops that bake in-house have a whole automated system. Even my local apple orchard has a mini doughnut factory, no humans required. After that, the stand mixer is just a kitchen tool like the stove and the fryer. If I make a cake from scratch but I use a stand mixer, is it suddenly not handmade anymore?

@@ohrats731 I am of the belief that if you use anything other than your hands and natural heat (i.e. fire) you are in fact not making something "hand made". There is hand made, machine made, and machine assisted. This donut shop is running a racket because they're marketing their product as something that it is not. It's a travesty, really.

@@ohrats731 still a machine that does the hardest part of the job which is mixing everything together ruins the no machines at all. A fryer is required to cook donuts, so that's fine. There's places that still hand mix stuff so it's possible, just more time consuming.
