Oh yeah baby! We had this a bunch of times in Hanoi! It came with a mountain of spring rolls. The dude at our hotel took us to a spot where the locals eat and it was so awesome! A super happy Vietnamese woman who spoke very good English asked us how we found the place because she never sees foreigners there. Place was sick!!!!!

You have the added qualification that you can speak the language and, therefore, communicate alike both to the Owner and English speaking audiance which is a boon being bilingual in this case. My suggestion is to blend your blogs with a potpourri of the surrounding Village Life, their Local delicacies, Hidden unexplored eatery gems, How their Seasons change their dishes, French architecture(Northern Vietnam), Street hawkers/Floating markets AND ABOVE ALL(where others have fallen flat) is their inability to name the various cooking ingredients, vegetables etc. in English thus most of the flavour is lost. In a nut-shell DON'T FOLLOW THE BEATEN PATH.
That's not 100% fish sauce. It has been mixed with water, sugar, maybe msg, and etc to get that level. Otherwise, it would be smelly and salty as hell ...... lol ...
