Whats more surprising is that he showed he actually felt pain from it. Hes picked thing out of boiling oil before and showed no reaction. That tallow probably would've given a normal person irreparable 3rd degree burns and nerve damage.

As someone living in central Louisiana and having eaten at the original Cane's multiple times, I have never tried the bread w/ the slaw! I always switch the slaw for double fries or toast. I know it's too late, but it's a wheat and white flour blend seasoned with salt and msg. The meat itself is the tenderloin from the back of the chicken instead of using the breast. The sauce is about 70% mayo by mass, then about 25% ketchup, then 4.5% Worcestershire sauce, and as much ground black pepper as you can reasonably handle plus a pinch. The chicken is dipped in a mix of egg and then tossed in the flour mix and fried anywhere from 350°-375° depending on the average chicken tender size for the day.

I spent two hours today going through all my herbs and spices refilling, making different blends tossing out any dated. You in this one recipe put my spice rack to shame. PLUS after studying food for 40+years and reading the World Of Food Encyclopedia you used some spices I have never heard of. Way to go Chef.

As someone used to work for Cane's for 4 years I can tell you all about it. Chicken is used 9 days from kill date fresh and never frozen. It's weighed and graded in store every day. The fingers are marinated in a brine solution for 24-36 hours. The size ranges, but it depends on the supplier a lot if they get bigger or smaller one stores have little control other than telling suppliers. Perfect cooking size is 1.2 to 1.5 oz. The crinkle cut fries are the only things frozen, they come from grade A Idaho potatoes. Tip: ask for Louisiana Hot sauce and mix in your cane sauce. You can also request Honey Mustard which is also made in house at Cane's as well as the sauce. You can also order 32oz cup full of cane sauce. You can order your toast as B.O.B.S stands for Butter On Both Sides!

I'm a culinary student and a chef once told me that you dip a bit of the food before fully submerging it because the initial part will cook first, and once you drop the entire thing, that Cooked part will float and pull the entire thing up, preventing it from sticking to the bottom. Now if it's a pan it's not a big deal, but that'll be a tremendous mess if it sticks to mesh bucket of a fryer so, handy trick🤷🏻‍♂️

The way they always handle poultry makes me anxious!! And they're in the US (at least in my mind there's a lot of salmonella there could be wrong sorry)

@@marianna3253 Salmonella isnt really... in a place or region. It's something that grows in higher temps, mainly when food isn't refrigerated. It's mainly caused by who's handling it, and if they do it poorly. If it can be tied to a region it would be more common in countries or cities with poor sanitation, I would not list California amongst those. Michigan maybe
