Tilapia with black bean and mango salsa for $2.43 per serving!
Our concoction for the $5.00 meal challenge thrown out by " Hobbs Ventures!"
We'll be home the day after Easter with a visit from Tony Baloney so not sure about videos for either channel!

~Mango salsa~
•1 (15 oz.)can mango, drained
•1 red bell pepper diced
•1(15 oz) can black beans rinsed &
drained
•1/2 cup red onion diced
• fresh cilantro, chopped(to taste)
•Juice of 1 lime
•1 tsp. apple cider vinegar
•2 tsp. sugar
•1 tsp. chili powder
~Mix together, set aside
~The Tilapia~
4 (6 oz) tilapia fillets
Zest from 1 lime
Juice of 1 lime
3-4 tsp. olive oil, divided
1/2 tsp. ground cumin
Pinch of red pepper flakes(opt.)
Salt and Pepper to taste
~Instructions~
In a small dish, combine zest, juice, 1 tsp oil, cumin, and red pepper flakes. Rub over both sides of fillets,and then sprinkle them with salt and pepper, marinade for about 30 minutes.
Add oil to a hot skillet. Saute 3-5 minutes per side or until fish flakes with a fork.(Internal temp 145° F)
Serve over rice and top with Mango Salsa.
