Back in the day when you had crates of vinyl you had to extract and compress your samples from them to compose a track. The industry standard for accomplishing this was the SP1200. It let you dissect a song and isolate specific sounds then manipulate them before putting em in the loop behind a drum pattern if you so choose. There are quite a few VST's that essentially do the same exact thing, minus the analog component from the age of the crate. So to answer your question, the process requires expensive (or pirated) production software, the proper plug-ins/ VST's along with the applied knowledge on how to use it and voila! you're making instrumentals without needing the original masters.
