6 اكواب ماء لسلق الفاصوليا (نحتفظ بماء السلق)
ربع كوب (60 مل) زيت زيتون
2 كوب (200 غرام) بصل شرائح
6 فصوص ثوم مهروسين مع نصف ملعقة صغيرة ملح
نصف كيلو بندورة مقشرة ومقطعة (3 حبات)
ملعقة صغيرة ملح
نصف ملعقة صغيرة كمون ناعم
ربع ملعقة صغيرة فلفل اسود
كوب صوص البندورة
للقلية: (اختياري)
2 ملعقة طعام زيت زيتون
2 فصوص ثوم مهروسين مع ربع ملعقة صغيرة ملح
نصف باقة كزبرة (25 غرام) مفرومة
Ingredients:
2 cups (350 g) great northern beans
2 tsp baking soda
6 cups water for soaking the beans
6 cups water for cooking the beans
1/4 cup (60 ml) extra virgin olive oil
2 cups (200 g) sliced onions
6 cloves minced garlic + 1/4 tsp salt
500 g tomatoes, peeled and diced (3 medium tomatoes)
1 tsp salt
1/2 tsp ground cumin
1/4 tsp black pepper
1 cup tomato sauce
Garlic cilantro sautee:
2 tbsp olive oil
2 cloves minced garlic + 1/4 tsp salt
1/2 bunch (25 g) chopped cilantro
🌹Instructions🌹
1. Sort the beans to rid of any unwanted beans, then place in a large bowl with baking soda. Pour in water and stir well. Soak overnight.
2. Drain the beans and wash well, then place them in a medium pot with the water. Bring to a boil on high heat. Skim the foam that floats to the surface with a large spoon and discard. Reduce the heat and cook covered on low heat for 30 minutes or until fully cooked.
3. In another pot sautée onions with olive oil on high heat until golden, about 7 minutes. Add 6 cloves minced garlic and stir for 2 minutes. Add the chopped tomatoes and salt stirring to combine. Bring to a boil, then cook covered on low heat for 10 minutes.
4. When the beans are ready, strain and reserve the water. Add the beans to the tomato onions mixture with the cumin, black pepper, tomato sauce, and 2 cups of the beans water. Stir well and bring to a boil on high heat. Reduce the heat and simmer for 30 minutes.
5. During the last 10 minutes sautée the garlic and cilantro with olive oil in a small saucepan on medium heat for 2 to 3 minutes. Add to the beans and continue cooking for 5 minutes.
