@@tasteindiaisha I saw your recipe today morning and started preparing(I had raw,fresh mangoes and I was desperately searching for such recipe.)The jaggery I had,was not hard like yours.It's consistency was runny.So I cooked it a bit before adding to the achaar.Thanks again.
8 dino ke baad oil kam ho jaye achar mai, oil thoda aur le jise aam ke pieces oil mai ache dube rahe. Phale oil ko garam karle aur phir thand hone ke baad hi achar mai add kare. 8-10 din tak achar ko dhoop mai rakhe ise achar jaldi soft hoga aur ek baar din mai masala aur oil ko ache se mix kar le ise aap ka achar lambe samay tak kharab nahi hoga.
Achar ko 3 se 4 din ki dhoop mai rakhe. Achar mai gur hone ki wajah se achar saal bar kharab nahi hota. Aap achar ko bahar rakh ke saal bar kha sakte hai.

Why you have not mix aam with turmeric and salt to release water and then kept to dry .As per your process it will spoil the aachar in few days .Can you explain
It will not spoil the achar, i have made it & store it for one year. Gur will act as preservative in the achar it enhance the taste & prevent it from spoil.

Nice recipe par aapne aam ko jaldi namak laga kar rakha nahi taki uska pani nikal jaye. Phir aam ko 1 din k liye sukhne k liye rakhna hota hai tab masale milaye jaatey hai

Hi. Maine aapke recipe se Achaar banaya and dhoop me rakha. Gud melt ho gaya saara and kafi gravy ban gai. Mujhe sukha banana hai. Kya mai use gas pe sukha sakti hu. Please reply mera achaar bich me atka hua hai
Hello Girl's Destination, Thanku so much for trying this recipe. 😊😊 Gur achar mai thode din ke baad masala mai mix ho jayega aur thick ho jayega. Gas mai pakane se aam ke piece hard ho jayege, isliye achar ko gas mai na pakaye.
Aap Rai daal ki jagah black mustard seeds ka use kar sakte hai. Black mustard seeds ko dry roast karne ke baad mixi mai grind kar ke powder bana ke masala mai mix kar le.
Before making this I rubbed with salt and turmeric and sun dried for half day and then made the achar. Kal banayi lekin aam hard lag raha hai, baad mein aam soft ho jayega ya 1 day dry kiya isiliye aisa hua
Achar ko 2 se 3 din ki dhoop mai rakhna hai. Achar mai gur melt ho gaya hai isliye pani jaisa lag raha hai, thode din mai masala mai mix ho jane ke baad thick ho jayega. Achar ke liye Glass ke jar ka use kare, plastic dibe ka use na kare.
Mam.achar ko galane ke liye Koi tric btaye please.. Mera aam ka achar ghud ki bjah se bahut ptla ho gya hai 6.7.din already ho chuke hai achar shukane ke liye bhi Koi tric btaye.... Please
Achar ko galane ke liye 2 spoon salt add kare ise achar jaldi pak jayega aur gal jayega. Meetha achar thoda juicy hi hota hai kyu ki isme gud add kiya hai.
Aam ko haldi namak add karke sukhana nahi hai, sarso oil thoda jada add kare jise achar oil mai duba rahe isse achar 2 se 3 saal tak kharab nahi hoga. Bich mai bich mai spoon se mix kare taki oil aam aur masala mai ache se mix ho jaye.
