I too have researched and tried to duplicate the taste of Irani chai served in hotels. Your recepie explains the same in very simple language. Yes it takes more time, gas, etc. but the final taste is definitely worth it. Your recepie is not for the impatient or economy minded person. Thank you for sharing. This is a quest for ultimate taste and these things always take time and money.

It’s a Chai which is a very famous in Hyderabad, people from all over the world totally adore and relish this kind of tea. Always nice to learn the soul of food. A person puts in effort and research to bring knowledge of certain foods to others. We should be respectful of what we comment. Very Good Tea. I'm also from Secunderabad from 1952 to 1980, I used 2 enjoy the Tea of Alpha Hotel, Garden Restaurant & Paradise Hotel. Very Good no one can beat Hyderabadi Chai at any cost. Good Receipe.

@Ravi Mahalay May be u r not very aware about this tea. Irani tea or Hydrabadi Dum tea is itself very famous tea. Either u need to visit hydrabad or Pune. Aur kahan milegi that i dont know. @@rajanrincy7927 it's not Irani tea because in Assam we make this type of tea from Grandma ' s time ,we also use cream when available , Britishers taught to Assamese to make ofcourse nowadays Assamese people have become lazy and forgot this way but I always make our evening tea in this process

actually (being an iranian)its not iranian tea it s a mixed blend of Indian tea with some innovation. but madam you did a good job. and I have read the comments of people criticizing the method actually they dont know the taste and the artistic way of making any thing

Great job and thanks for the information I have sought for years ! I have studied and worked in Mumbai for many years and always had tea at Irani restaurants there. I am a great fan of Irani chai and miss it in Delhi. But I am surprised that it takes so long to make. Wonder if Irani restaurants prepare it this way. Must be time consuming and expensive to make. Is it healthy ? Please specify the brand of tea leaves you use or recommend to make authentic Mumbai Irani chai. Thanks.

Hi Tutu I like the way you use the pot + atta + lid to develop a steam in the pot so that the tea is well infused. Couldn't we create a similar situation using a pressure cooker on very low heat. Please do let me know if this would work
Thanks for your reply. I shall try it out. However, you need a lot of patience to enjoy such a tea. I am in Nairobi, Kenya and do miss some of these incredibly delicious foods and drinks,especially the world famous Hyderabadi dum mutton biryani. Well done Tutu and keep exploring
U r correct, ur method is as same as mine , ach chi chai thareeka y se hi banaya Martha hai instead of milk , milk powder 4 chand laga dey they hai may may , chai experts hi mazaydaar chai banasakthey hain , warna aisae waise chai tho har koee banadaytha hai, mai baahar kaheen bhi chaai naheen piungi sirf meri chaai muje aur meray children ko achchi lagthi hai , people come to drink tea in my house , but can make it with in five minutes if milk powder is there or concentrated milk is there already , try it👍🏻
Waise bhi gas itni mehengi hogyi hai..ayse chai pakne lage toh bechare garib logo ka diwala Nikal jaayega..by the way Ayurvedic mein itni strong chai peene ki manaayi hai..Q k aaton k liye haanikarak hai.. mei irani hun magar humare ghar me humesha Kali chai Banti hai...maine aysi dudh wali chai pehli baar dekha aur suna hai..itni strong chai peene se intestine ka cancer hota hai.. sorry I don't means to hurt you but but it's a fact... strong tea cannot allow the Bowl to pass...
This is not wastage of gas or time because daily we make tea in our home separate milk and separate tea which is healthy we are Assamese so we make teas in several ways .

We also boil the tea water in a different saucepan and milk differently it don't take so much time as many commenters expressed,its tasty and healthy otherwise boiling tea and milk together may cause gastric may it's easy and fast but cause of gastric.
