Namaste everyone 🙏
Today I’am making Kinema (Fermented soybeans)which is ethic food of Rai’s and Limbu’s.
It is sticky,stinky pungent smell and unique fermented flavour.
The common word kinema is derived from “Kinamba”of the Limbu dialect in which’Ki’ means Fermentation and ‘Nambaa’ means Flavour.Thus it is assumed that the Kinema originated from Limbu communities,who reside in the eastern Himalayan region.
Ingredients for this Recipe
1kg Soybeans
Fermentation time 3 to 5 days

@@TshetenDukpaRecipe oh ho, I didn’t know kinema was a Rai/Kirat cuisine! The first time I tasted kinema was about 62/63 years ago in Calcutta. I remember a Khasi lady from Shillong came to where we lived to sell kinema and my mom bought some for dinner. I remember holding my nose and stating it smelled like “goo”, mom said “just you wait until I’ve cooked and you’ve eaten some with masu, kinema jhol ra bhat”, she was not kidding! It tasted heavenly and I got hooked. I thought kinema was an authentic Khasi delicacy! Thank you so much for rekindling fond and sweet memories for me, chori 🙏🏼

Thank you for the receipe we always buy Natto (fermented soyabean ) but now we know how to make our most delicious food . Thanks for promoting ethnic foods .Ethnic food should be promoted coz if we go to Nepalese restaurant 80% of the food is Indian dish and very hard to find a Nepalese restaurant which sells authentic ethnic Nepali food.

Kilima is also an Indian dish because I hope that you know that the state of Sikkim in India comprises mostly of Nepalese, Bhutanese, Sikkimish, etc.. So we eat kinema here too

वाउ यम्म्म्म्मी 💕😋😋😋मेरो प्रिय खाना “किनिमा” यो भए पछी जहिले चामल अलिक बढी पकाउनु पर्छ मेरो घर मा😃 किन कि म थपी थपी खान्छु । 😃😃 तर मेरो आमा ले घर मा भटमास पाकी सके पछी पानी फालेर तात्तातो सानो ओख्ली मा हल्का कुट्नु हुन्छ अनि चिसो हुन नदी हल्का तात्तातो हुँदै तपाइले जस्तो कपडा ले बेरेर राख्नु हुन्छ । तर आज तपाइले चिसो बनाएर राख्नु भो नकुटी कन यसरि पनि हुदो रहेछ थाहा पाइयो । थ्यान्क यू सिस्टर ।

It is called natto in japan and people everyday eat as breakfast thats why they live long and healthy. We nepalese also start preservinfg our health and tradition by including it in our diet along with our food...

My mum taught me, once you drain it, do not wash with cold water, while still warm mash it.. then pack it… once ready… you can dry and preserve for long term use …

This is exactly the same as Japanese Natto food, They called it super food. In Nepalese called Kinema. These are the biggest source of K2 vitamin and very good for heart health. This is one of the reason why Japanese are living longer. Now Nepalese should start commercialising this food in proper way like natto.

This is called “Nattou/納豆” in Japan 🇯🇵 and I love to eat it with adding raw egg and soy sauce.

Not really natto uses a special type of bacteria found in rice husk to ferment whereas the fermentation of kenema is fermented using common fermenting bacteria. Natto has a sticky nature whereas kinema doesn't have the sticky nature.

@Bandana Pradhan If you want to keep longer then sun dry is best option you can store longer and doesn’t need to put in fridge.Like this fresh one 2 to 3 you can keep in fridge 🙏
