INGREDIENTS:
FOR BATTER:
* Gram Flour (बेसन) - 1 bowl
* Salt (नमक) - as per taste
* Turmeric powder (हल्दी पाउडर) - some
* Red chili powder (लाल मिर्च पाउडर) - some
* Water (पानी) - as per taste
FOR VADA:
* Oil (तेल) - 2 tsp
* Mustard seeds (राई)
* Green chili (हरी मिर्च)
* Asafoetida (हींग)
* Garlic (लहसुन)
* Ginger (अदरक)
* Curry leaves (कड़ी पत्ता)
* Dry red chili (सूखी लाल मिर्च)
* Turmeric powder (हल्दी पाउडर)
* Potato (आलू)
* Lemon juice (निम्बू का रस)
* Coriander leaves (धनिया पत्ती)
* Salt (नमक) - as per taste
* Oil (तेल)
FOR CHUTNEY:
* Oil (तेल) - 1 tsp
* Garlic (लहसुन) - 8-10 pieces
* Peanut (मूंग फली) - 2-3 tbsp
* White sesame seeds (सफ़ेद तिल) - 1 tbsp
* Desiccated coconut (नारियल बुरादा) - 2 tbsp
* Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर) - 1-1.5 tsp
* Salt (नमक) - as per taste
RECIPE:
For Dry Garlic Chutney, take a pan, put some Oil and some cloves of Garlic in it and roast it. Then put some Peanuts and White Sesame Seeds and mix them. Then turn off the flame and put some Desiccated Coconut, Kashmiri Red Chili Powder and Salt and let the masala for cooling down. Then grind them all and the Dry Garlic Chutney will get ready.
In a bowl, put some Gram Flour, Salt, Turmeric Powder, and Red Chili Powder then add Water gradually in it and make the batter and keep it aside.
For Vada, take a pan, put some Oil, Mustard Seeds, Green Chilies, Asafoetida, finely chopped Garlic, and Ginger, some Curry Leaves, Dried Whole Red Chilies, boiled and crushed Potatoes in it. Mix them all and then put some Lemon Juice, finely chopped Coriander Leaves and Salt. Then turn off the flame and keep it for cooling down. Then make the balls of the filling, dip the balls in the Gram Flour Batter and fry them in the medium heated Oil. In 2-3 mins, Vadas will get ready.
Take some Whole Green Chilies, make cuts in them and dip them in batter and fry them as well.
Take a Pav/Bun, cut it from the middle, put some Dry Chutney Masala in it then put a Vada and some more Masala on it and serve the very tasty Mumbai Special Vada Pav with the fried Green Chilies.
