INGREDIENTS
6 -7 Sliced of Rawad/surmai/rohu/katla
Foundation masala
1 nos Lemon
1 TSP Salt.
½ TSP Red chilly powder
Hara masala.
1 cup green coriander
3 nos green chillies
5 nos Garlic
1 tsp jeera
1 tsp salt
1 nos Lemon
1 tsp garam masala powder
1 tbsp oil
2 tbsp rice flour
Ajwain masala
1 TSP ajwain
½ TSP black pepper
1 TSP fennel seeds
½ TSP jeera
½ TSP kasoori methi
2 tbsp mustard oil
1 TSP turmeric powder
1 TSP kashmiri chilli powder
1/2 TSP kala namak
½ TSP amchoor powder
1 TSP ginger paste
1 TSP garlic paste
1 egg
1 TBSP besan
Sunday marination
1 TSP red chilly powder
1 TSP haldi powder
1 TSP coriander powder
1 TSP garam masala powder
1 TSP amchoor powder
½ TSP kasoori methi
1 Tbsp mustard oil
½ TSP kala namak
2 TBSP rawa
METHOD
Clean wash and pat dry the fish
In a clean bowl mix lemon juice, salt and red chilly powder and marinate the fish
For hara masala
Grind coriander, chilly, salt, garlic, lemon juice to a fine paste.
Mix in oil to the paste, add garam masala and add ⅓ of the fish to marinate
Dust the fish with rice flour
Heat oil on a non-stick tawa and cook fish on medium slow flame for 3 minutes on each side.
Fish is ready to be served.
For ajwain masala
Dry roast ajwain, black pepper, fennel and jeera and grind it into powder.
Warm mustard oil and add turmeric powder and red chilly powder and mix well.
Add grounded masala, black salt and amchoor powder.
Add ginger and garlic paste and mix well and add ⅓ of the fish to marinate
Crack one egg and add besan and mix nicely
Heat mustard oil on a non-stick tawa and cook fish on medium slow flame for 3 minutes on each side.
Fish is ready to be served.
For Sunday masala
Add red chilly powder,haldi powder, coriander powder, garam masala powder, amchoor powder , kasoori methi, mustard oil and kala namak to the previously marinated fish.
Spread rawa suji on a plate lightly coat fish with rawa.
Heat mustard oil on a non-stick tawa and cook fish on medium slow flame for 3 minutes on each side.
Fish is ready to be served.
