खुरचन के नाम से जानते हैं लोग...
काढ़े में दूध और शक्कर से बने इस व्यंजन को खुरचान के नाम से जाना जाता है। जो न केवल क्षेत्र की लोकप्रिय मिठाई है, बल्कि राष्ट्रीय राजमार्ग से निकटता के कारण यह व्यंजन अब दूर-दूर के राज्यों और देशों में भी पहुंच रहा है। वर्षों से चली आ रही यह जमाखोरी अब यहां के लोगों की पहचान ही नहीं, बल्कि मुख्य व्यवसाय बन गई है। हर घर से रोजाना 2 से 3 क्विंटल बिकने वाला यह व्यंजन त्योहारों में 300 से 400 किलो तक बिक जाता है।

यह डिश भारत के अलावा उसी देश से जाती है। रामपुर बघेलान को इस व्यंजन का बाजार माना जाता है। सतना जिले की इस तहसील में पिछले 60 सालों से यह अनोखा व्यंजन बनाया जाता है। यह डिश दूध और पाउडर चीनी से बनाई जाती है जो बनने के बाद खुरचनी बन जाती है.
यह खुरचन क्षेत्र के साथ-साथ अन्य राज्यों में भी प्रसिद्ध है। मध्य प्रदेश की सीमा से सटे उत्तर प्रदेश, गुजरात, महाराष्ट्र, हरियाणा, दिल्ली सहित विदेशों में भी इसकी पहुंच है। यह डिश यहां 12 महीने तक बिकती है। लेकिन त्योहारों में इसकी डिमांड पूरी करना मुश्किल होता है, क्योंकि इसे शुद्ध दूध से बनाया जाता है।
200 से 300 रुपए किलो तक बिकता है।
एक खास त्योहार में हजारों क्विंटल दूध सिर्फ खुरपी बनाने के लिए पीया जाता है क्योंकि यह लोगों की पहली पसंदीदा मिठाई है। 200 से 300 रुपए किलो बिकने वाला खोरचन भी यहां के लोगों की रोजी-रोटी का एक बड़ा साधन है।
