Ingredients
For the Base:
1 cup semolina (suji/rava)
1/2 cup plain yogurt
1/4 cup water (adjust as needed)

1/4 teaspoon baking powder
1/2 teaspoon salt

1 cup shredded mozzarella cheese (or any cheese of your choice)
1/4 cup sliced onions
1/4 cup sliced bell peppers (any color)
1/4 cup sliced mushrooms (optional)
1/4 cup sliced olives (optional)
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon red chili flakes (optional, for heat)
Instructions
Prepare the Base:
In a mixing bowl, combine the semolina, yogurt, and water. Mix well to form a thick batter. If the batter is too thick, add a little more water to reach a spreadable consistency.
Add the baking soda, baking powder, salt, and oil to the batter. Mix until well combined.
Let the batter rest for about 10 minutes. This helps the semolina absorb the liquid and become slightly fluffy.
Prepare the Pizza:
Preheat a non-stick skillet or griddle over medium heat.
Lightly grease the skillet with oil.
Pour the batter onto the skillet and spread it evenly into a circular shape, about 1/2 inch thick.
Cook on medium heat for about 3-4 minutes until the bottom is golden brown and firm.
Flip the base carefully and cook the other side for 2-3 minutes.
Add Toppings:
Spread a thin layer of pizza sauce over the cooked base.
Sprinkle the shredded cheese evenly over the sauce.
Add your desired toppings (onions, bell peppers, mushrooms, olives, etc.).
Sprinkle dried oregano, basil, and red chili flakes (if using) over the top.
Cook the Pizza:
Reduce the heat to low, cover the skillet with a lid, and cook for another 5-7 minutes, or until the cheese is melted and bubbly.
Serve:
Once the cheese is melted and the toppings are cooked, remove the pizza from the skillet.
Let it cool for a minute or two, then cut into slices and serve hot.
