INGREDIENTS:
* Raw Mango(कैरी) - 20 Kg
* Salt(नमक) - 3 Kg
For Pickle Masala:
* Thick Fennel Seeds(मोटी सौंफ) - 750 Gram
* Yellow Mustard Seeds(पिली राई दाल) - 1 Kg
* Cumin Seeds(जीरा) - 250 Gram
* Nigella Seeds/Black Onion Seeds(कलौंजी) - 100 Gram
* Fenugreek Seeds(मेथी दाना) - 100-125 Gram
* Black Pepper(काली मिर्च) - 100 Gram
* Red Mustard Seeds(लाल सरसों/राई) - 200 Gram
* Coriander Seeds(सूखा साबुत धनिया) - 250-300 Gram
* Crushed Red Chilli(कुटी हुई लाल मिर्च) - 300 Gram
* Turmeric Powder(हल्दी पाउडर) - 300 Gram
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 500 Gram
* Asafoetida(हींग) - 20 Tsp
* Mustard Oil (सरसों का तेल) - 2 Litre (Optional)
RECIPE:
Take the Raw Mangoes, wash n wipe them then remove the upper black part & cut the Raw Mangoes with the help of a mango cutter as shown in the video. Remove its kernels/seeds & put all mango pieces in any utensil or jar, put some Salt & mix it well. Cover it n keep it for 2-3 hours.
For Pickle Masala, in a pan, put Fennel Seeds roast it for a min & take it out on a plate. Then roast the Cumin Seeds, Coriander Seeds, Black Pepper, Red Mustard Seeds, Yellow Mustard Seeds & Onion Seeds & take out them. Keep them for cooling down then coarsely grind roasted Fennel Seeds, Cumin Seeds, Coriander Seeds & Black Pepper in the mixer and mix all spices. Put Crushed Red Chilli Powder, Turmeric Powder, Kashmiri Red Chilli Powder & Asafoetida/Hing Powder & mix all well. Then Put in in the Mango & Mix well. After then put coarsely ground Spices, in the pickle & combined well. Then cover it with a muslin cloth & tie a knot & keep it for 3-4 days. (Meanwhile, mix the pickle gradually, mixing and tossing need to be done every day. Optional (Then heat some Mustard Oil & when it turns lukewarm then put the Oil in the Pickle & mix well.) The Pickle is ready, put it in a glass jar and enjoy the tasty Mango Pickle for a long time.
