Lassa paratha, also known as lachha paratha or layered paratha, is a popular Indian flatbread known for its flaky layers. Here's a basic recipe to make lassa paratha:
Ingredients:
2 cups whole wheat flour
1 teaspoon salt
1 tablespoon oil or ghee
Water, as needed''
Extra oil or ghee for frying
Instructions:
Prepare the Dough:
In a mixing bowl, combine the whole wheat flour and salt.
Gradually add water and knead the mixture to form a soft and smooth dough. Add water as needed.
Once the dough comes together, add 1 tablespoon of oil or ghee and knead again for a couple of minutes.
Cover the dough and let it rest for about 20-30 minutes.
Divide the Dough:
After resting, divide the dough into equal-sized balls. The size of the balls will determine the size of your parathas.
Roll out the Parathas:
Take one dough ball and roll it out into a thin circle using a rolling pin and a lightly floured surface.
Brush the surface of the rolled-out dough with a little oil or ghee.
Layer the Dough:
Starting from one end, make small pleats or folds in the rolled-out dough until you reach the other end. Think of it as folding an accordion.
Twist and Roll:
Hold one end of the pleated dough and twist it gently to form a spiral. Then, tuck the end underneath the spiral to form a round dough ball again.
Roll out Again:
Lightly dust the spiral dough ball with flour and roll it out again into a circle. Try to maintain the layers while rolling.
Cook the Paratha:
Heat a skillet or tawa over medium-high heat. Once hot, place the rolled-out paratha on the skillet.
Cook for a minute or two until bubbles start to appear on the surface.
Flip the paratha and cook the other side, applying a little oil or ghee around the edges.
Cook until both sides are golden brown and crispy.
Serve:
Remove the paratha from the skillet and place it on a plate lined with a paper towel to absorb any excess oil.
Serve hot with your favorite curry, chutney, or yogurt.
