Dhokar Dalna is a Famous Bengali Niramish Recipe. Dhokar Dalna recipe is very popular Bengali Veg Dish making with yellow split peas or chana dal. First step is making Dhoka by frittering chana dal paste and then we can cook Bengali dalna by using fried dhoka.
Ingredients -
Yellow Split Peas - 100 gm
Slitted Green Chilli - 4 to 5 pieces
Chopped Tomato - 1 piece medium size
Ginger Paste
Potato - 2 pieces medium size
Turmeric Powder
Red Chilli Powder
Cumin Powder
Cumin Seeds
Bay Leaves
Dry Red Chilli
Garam Masala
Raisins
Asafoetida / Hing
Ghee
Garam Masala Powder
Salt
Sugar
Refined Oil
Methods of how to make Dhokar Dalna:
1. At first grind the lentil to make a smooth paste.
2. Add 2 Green Chillies and little bit water and make the paste.
3. After making the paste add 1/4 tsp Turmeric Powder, 1/4 tsp Chilli Powder, 1 tsp Cumin Powder, 1 tsp Ginger Paste, 1/4 tsp Salt, 1/4 tsp Sugar and again blend properly.
4. After that heat up a kadai and add 1 tbsp. Refined Oil.
5. Add 2 pinch Asafoetida/Hing. Fry for 10 secs and add the Lentil Paste.
6. Fry on medium flame for 3-4 mins till it becomes completely dry.
7. Now take a plate and brush oil in it.
8. Add the dal in the plate and spread evenly. Leave it for 5 mins them cut in square or barfi shape to make the Dhoka.
9. Add oil in the kadai fry the Potato.
10. Add little bit Salt and Turmeric Powder while frying. Fry the Potatoes properly and take them out.
11. Cut the Dhoka in pieces and fry them.
12. Now to make Dalna add 3 tbsp. Refined Oil in the kadai.
13. Add Bay Leaves, 2 Dry Chillies, Whole Garam Masala, 1/2 tsp Cumin. Fry the masala for 30 secs.
14. Then add 1 medium size chopped Tomato and fry for 1 minute on medium flame.
15. After 1 minute add 1 tsp Ginger Paste and fry for 2 mins on medium flame.
16. After frying add 1/2 tsp Turmeric Powder, 1 tsp Cumin Powder, 1/2 tsp Chilli Powder, 1/2 tsp Salt, 1/2 tsp Sugar, 3 chopped Green Chillies.
17. Add 2 tbsp. Water and cook the masala on medium flame. After 2 mins add the Fried Potatoe. Cook for 1 more minute on high flame.
18. Then add 2.5 cups Water and cook on high flame.
19. When it starts boiling cover and cook for 10 mins.
20. Add Raisins then cover and cook for 10 mins on medium flame. After 10 mins check if the potatoes are cooked or not.
21. Then add the Dhoka and cook for 5 more mins.
22. Add the dhoka after the potato is done. Mix well and cover and cook for 5 mins on medium flame.
23. After 5 mins turn the flame to high .
24. Add 2 tsp Ghee and 1/2 tsp Garam Masala. Cook for 2 mins and our Dhokar Dalna will be ready.
25. After 2 mins turn off your oven. Cover and let it rest for 5 mins then serve hot with Rice.
