Fulkopir Roast or Cauliflower Roast is very popular delicious Bengali Recipe. Phulkopi is one of very tasty vegetables of winter. This easy cauliflower recipe prepared mainly in winter season. Also it is very special phulkopir recipe for Bengali Occasions like Marriage party, Birthday Party, Puja and Festivals.
Ingredients:
1. Phulkopi / Cauliflower - 2 Pieces
2. Tok Doi / Plain Yogurt - 150 GM
3. Cumin Powder
4. Raisins
5. Red Chilli Powder
6. Kashmiri Red Chilli Powder
7. Garam Masala
8. Ghee
9. Garam Masala Powder
10. Fresh Cream
11. Onion Paste
12. Tomato Paste
13. Ginger Paste
14. Cashew Nuts Paste
15. Salt
16. Sugar
17. Refined Oil
How to cook Phulkopir Roast:
1. At first to boil add water in a pressure cooker along with Cauliflower, Salt
2. Boil them and then strain properly.
3. Heat up oil and fry the boiled Cauliflower properly on medium flame.
4. After frying take it out.
5. Now add 4 tbsp. Refined Oil and 1 tbsp. Ghee in the kadai.
6. Add Whole Garam Masala and fry for 15-20 secs.
7. Then add 1 medium size Onion Paste. If you want to make it veg then avoid the Onion paste. Fry the Onion Paste well.
8. After frying add 1 tbsp. Ginger Paste . Fry for 2 more mins on medium flame.
9. After 2 mins add 1/2 tsp Chilli Powder, 1 tsp Cumin Powder, 1/2 tsp Kashmiri Red Chilli Powder, 1/2 tsp Salt, 1 tsp Sugar and cook for 1 minute.
10. Now add 25 Cashew Nuts Paste. Then cook for 1 more minute.
11. Add Tomato Puree and cook for 1 more minute on medium flame.
12. Add 100 gm Yogurt and cook for another minute.
13. Add 1/2 tsp Garam Masala Powder, Fried Cauliflower.
14. Make the gravy more so you can mix it properly. Mix well like this and cook on high flame.
15. Cook for 1 minute on high flame then turn the flame to low and cover and cook for 5-7 mins.
16. Add the raisins and close the lid.
17. After 5-7 mins finally add 1 tbsp. Fresh Cream and mix well.
18. Turn off your oven, it's ready. Cover and let it rest for 5 mins then serve.
19. Serve it hot with Rice, Pulao, Poori or Paratha.
