Chilli fish with kolkata bhetki/ brakish water sea bass...
1 kg kolkata bhetki fish
De boned and cut into cube sized dices.
Properly washed
1st marination with..
1 tablespoonful vinegar
1/2 teaspoonful black pepper crushed
Salt
For about 10 mins with a cover.
The excess water, if any, is drained off.
Now,
1 teaspoonful Ginger-garlic paste
1/2 teaspoonful red chilli powder
1/2 teaspoonful salt
1/2 teaspoonful black pepper crushed
1 tablespoonful dark soya sauce
1/2 teaspoonful red chilli sauce
1/4th cup cornflour
1 egg
The 2nd marination is done.
Refined oil is used for cooking
Once the oil is hot
The flame of the burner is kept at medium
The fish cubes are fried in batches as per available space
In a bowl
1/4th cup tomato ketchup
2 tablespoonful red chilli sauce
2 tablespoonful dark soya sauce
1/4th cup water
1/2 teaspoonful vinegar
Is taken and mixed thoroughly
Some of the oil used in frying is kept aside for later use.
In the remaining oil
Onion and capsicum diced are fried and then transferred to a bowl.
In the same remaining oil
1 tablespoonful of garlic keema
A little less than 1 tablespoonful of ginger keema is added.
3 green chillies are added.
Sautéed for sometime
Then the pre mixed sauce is added.
1/2 teaspoonful black pepper crushed
1/2 teaspoonful kashmiri chilli powder
A pinch of sugar.
Salt as per taste is added.
Luke warm water is added
The mixture is properly boiled till its ready.
2 teaspoonful cornflour
2 tablespoonful water is added in a bowl
This is then mixed in the gravy
The fried coated fish balls are then added.
Then the fried capsicum, onion and green chillies are added.
1 pinch of ajinomoto or chinese salt is added.
The chilli fish is ready to be consumed as a side dish or even as a stand alone dish.
