தேவையான பொருட்கள்
வேகவைத்த சாதம்
மஞ்சள் தூள் - 1/2 தேக்கரண்டி
உப்பு - 1 தேக்கரண்டி
எண்ணெய் - 4 தேக்கரண்டி
எலுமிச்சைப்பழம் - 2
வேர்க்கடலை
கடலை பருப்பு - 1 தேக்கரண்டி
உளுத்தம் பருப்பு - 1 தேக்கரண்டி
சீரகம் - 1/2 தேக்கரண்டி
கடுகு - 1/2 தேக்கரண்டி
முந்திரி பருப்பு
சிவப்பு மிளகாய் - 2
பச்சை மிளகாய் - 2 கீறியது
பெருங்காயத்தூள் - 1/4 தேக்கரண்டி
கறிவேப்பில்லை
செய்முறை:
1. ஒரு பாத்திரத்தில், வேகவைத்த சாதம், மஞ்சள் தூள், உப்பு மற்றும் எண்ணெய் சேர்த்து கலந்து வைக்கவும்.
2. கடாயில் எண்ணெய் ஊற்றி வேர்க்கடலையை சேர்த்து வறுக்கவும்.
3. அடுத்து கடலை பருப்பு, உளுந்தம் பருப்பு, சீரகம், கடுகு, முந்திரி பருப்பு சேர்த்து பொன்னிறமாக வறுக்கவும்.
4. கடுகு பொரிய ஆரம்பித்ததும், இதில் சிவப்பு மிளகாய், பச்சை மிளகாய், பெருங்காயத்தூள், கறிவேப்பிலை போட்டு கிளறவும்.
5. பிறகு கலந்து வைத்த சாதத்தை சேர்த்து கிளறவும்.
6. அடுத்து எலுமிச்சை சாறை சாதத்துடன் சேர்த்து மிதமான தீயில் கலந்து விடவும்.
7. அருமையான எலுமிச்சை சாதம் தயார்.
