Unniyappam
Ingredients
1. Raw rice - 1 ½ cup
2. Jaggery(grated) - 1 to 1 ½ cup
3. Ripe banana (robusta or palankodan) - 5 to 6
4. Chopped Coconut slices - 2 to 3 tbsp
5. Sesame seeds - 1 tsp
6. Cumin seeds - ½ tsp
7. Cardamom powder -1 pinch
8. Ghee / oil for frying -1to 1 ½ cup
9. Sugar for garnishing -2 to3 tsp
10. Ghee - 1 tbsp
Preparation
1. Soak the rice 4 to 5 hrs, wash & grind in the mixie slightly coarse with less water.
2. Beat jaggery & the banana well, add to the ground rice, add the items 4, 5, 6 , 7 & 10, mix well. Ferment 3 to 4 hrs.
3. Stir & adjust the water consistency.
4. Heat ghee or oil in the mould, pour the batter & cook till golden brown.
Garnish the cooked unniyappams sprinkling sugar while hot.
