I am sharing a New Year special cake recipe today. Purple Yam Cake or Ube Cake is a Filipino special cake. I have used ube jam in this recipe which is easily available in amazon.
Ingredients:
All purpose flour-1 cup
Baking powder-1 teaspoon
Baking soda-1/4 teaspoon
Salt-1/4 teaspoon
Eggs-3
Ube flavour-1 1/4- 1 1/2 teaspoon
Sugar-3/4 cup
Oil-1/4 cup
Ube jam/spread-1/2 cup
Milk-1/4 cup
Vinegar-1/2 teaspoon
For Sugar syrup:
Sugar-1/4 cup
Water-1/2 cup
For frosting:
Cream cheese-200 gm
Vanilla essence-1 teaspoon
Condensed milk-1/2 cup
Whipping cream-2 cups
