Spicy Sri Lankan Pineapple Curry | Authentic Flavors with Maldivian Fish

Ingredients:
- 500g diced pineapple
- Mustard seeds
- Turmeric
- Roasted curry powder
- Chili powder
- Chili flakes
- Sugar
- Maldivian fish
- Coconut oil
- 2 cloves garlic
- Cumin, cinnamon, fenugreek (a little of each)
- Green chili
- ½ onion
- Thick coconut milk
Method:
1. Place the diced pineapple in a bowl. Add pepper, turmeric, chili powder, and salt. Mix well.
2. Heat a pan and add coconut oil. Once hot, temper with garlic, curry leaves, pandan leaves, and - onion. Add fenugreek, cumin, and cinnamon, and fry until aromatic. Include mustard seeds and stir.
3. Add green chili and continue tempering. Then add chili powder and turmeric, and mix well.
4. Once the spices are well-fried, add the pineapple. Do not add water. Add Maldivian fish and sugar. Mix thoroughly and cook with the lid on for a short while.
5. Stir in chili flakes and a little roasted curry powder. Boil well.
6. Adjust the taste with additional sugar, salt, and spices if needed.
7. When the dish is cooked, add ¼ cup thick coconut milk. Reduce the amount of gravy and remove from heat.
