This video shows how to make Ethiopian Clarified Butter with the following recipe.

Ingredients:
8 lb. (4 kg.) Unsalted Butter
- 12 tbsp. Ethiopian Cardamom 'Korerima' coarsely ground
- 1 1/3 cup Lippia Abyssinica 'Koseret'
- 2 tbsp. White Cumin 'Nechazmud' coarsely ground
- 2 tbsp. Black Cumin 'Tikurazmud' coarsely ground
- 2 tbsp. Fenugreek 'Abish' coarsely ground
- 2 pieces of Ginger peeled and pressed (optional)
- 4 leaf Lemongrass (optional)
To marinate butter 3-4 days before clarifying, use half portion of the following spices from the above list
- Ethiopian Cardamom 'Korerima' coarsely ground
- Lippia Abyssinica 'Koseret'
- White Cumin 'Nechazmud'
- Black Cumin 'Tikurazmud'
ለ 8 ፓውንድ (ለ 4 ኪሎ) ቅቤ
12 ሾርባ ማንኪያ የተፈጨ ኮረሪማ
1 1/3 ኩባያ ኮሰረት
2 ሾርባ ማንኪያ ነጭአዝሙድ
2 ሾርባ ማንኪያ ጥቁር አዝሙድ
2 ዝንጅብል
2 ሾርባ ማንኪያ አብሽ
4 ጠጅሳር ቅጠል
ቅቤውን አሽተን ከ3-4 ቀን ለማስቅመጥ ከላይ ካሉት ቅመሞች ውስጥ ግማሹን መጠን ቀንሰን መጠቀም፡

በጣም ያምራል። በተለይ የቅመሞቹን ስም በእንግሊዝኛ መጻፍሽና መጠናቸውንም መግለጽሽ ከሌሎች መሰል ቪዲዮዎች የተሻለ አድርጎታል። በስደት ለሚኖሩ ወንድሞች በጣም ጠቃሚ ነው። ዛሬውኑ የሌሉኝ ቅመሞች አዛለሁ። በጣም አመሰግናለሁ።

In addition to your ways of clarifying butter prior to mixing all the spices or marinating it, wash the butter. Any butter has dirt, even if it is processed butter. Melt your butter on very low heat, or by putting it on top of boiling water and adding room temperature water. For example, for 4 kg of butter, add 2 liters of water and keep it in the fridge for 24 hours. After 24 hours, remove it and discard the cloudy or milky kind of water by punching or making holes in the top or surface of the gold butter. You will thank me later.

The cloudy water you're referring to is the milk proteins and not "dirt" as we traditionally called it. Butter is made from water, fat and milk proteins. We we boil the butter on low heat, its water content evaporates making the butter's test intensify, discarding the milk proteins drastically increases the burning point of the butter to around 400 degres or more..

This is by far the best video I have ever seen on preparing Ethiopian butter, I love how descriptive you are and i love the neatness and the presentation. I used it many times and the butter testes just excellent! not to heavy not too light the taste is just perfect and I always refer to this video when ever I want to prepare kibe !thank you so much! Good job, I like how you presented everything in a clear way ,the only thing I would add is that it’s better to clarify/ ማንኮር your butter before you start the process so that the excess unwanted fat will be removed. But over all it’s a great video,keep up the good work!

Good job enatu, but Next time, before adding the ingredients (spices), melt the butter and keep it in the fridge for overnight, and the next day by using knife or spoon on the side of your butter remove the water. Then you can add the ingredients. It will give you more tests.

"Purify" ? that much better way discribing the processes than saying "Clarify" or may be we can use both words because we do both processes "Purifing" and "Clarifing", my dear.
