But not cleaning the fish and removing the gut isn't the Khmer way of cooking, especially with big fishes. I saw a video of Samre people preparing Toeuk Kroeung in the forest and they said they do not remove the gut from the fish because they prefer the bitterness it produces. I wish people who prepare and cook dishes a different way due to a different cultural heritage would say so to avoid any confusion.
