This episode was a delight, just as the (watered down) drink looks to be! I agree with your comment of raspberries being more simply a luxury now. How I miss my aunt's old wild raspberry bushes, though considering the size of wild raspberries, I would have needed to pick them all clean just to make this! Thank you for sharing these recipes Holly!

I am interested in all of the Trades of the time, farming and household gardens. Food wise, I would like to see spit fire cooking, smoke house, dutch ovens and of course bread!

A pleasant surprise! I know I should savour it but it's so tempting to make a nice salad with it - some boston lettuce, olive oil, raspberry vinegar, black walnuts and crisped pita would go nicely with a french onion soup

Honestly go for it! Once it's in a concentrated form, you're kinda free to do whatever you like. I think it also speaks to different outlooks on food separated by time

Just caught up with this series after watching your recent interview with Peter Kelly. You had me worried when you poured that amount of sugar in to the Raspberry mix! Didn’t realise at first that you were actually making a cordial to add to water, phew! Lol! Anyway, this looks like an interesting series, looking forward to watching more. This drink is also known as Raspberry Shrub, I believe. I tried to make this with strawberries in strawberry season. 👎🏼It just wasn’t the same since strawberries have a milder flavor than raspberries. I have made the raspberry version with apple cider vinegar and it made a great refreshing summer drink. The vinegar gives it a carbonated beverage taste. 😋

That's really interesting regarding how the strawberries turned out. I have tried Blackberry Shrub and it was quite similar, thinking of it now. I think the main difference between calling it a shrub, is that it implies it's going to be a mixer in a mixed drink or it is a fruit based liqueur, whereas in this particular case it can be served on it's own with just water.

Could you do a video on maple syrup and maple candy? I think it would be very interesting, and you could " kill two Birds with One Stone " (do more than one thing at a time ) as they would have done back in the day .

I recommend it - Thankfully you can dilute the concentrate to your desired taste, so you may want to add a little more water to mute the vinegar taste.

I used both ACV and Maple! One bottle of Bragg's which was about 5 cups, then one cup of maple. I was hesitant about how it would taste, so wanted something a little sweeter.

I've never heard of maple vinegar. How does that work?

It's interesting - I've come across a few methods. Either you add maple syrup to vinegar, or you can ferment vinegar yourself and add either maple sap or syrup as one of the base ingredients. I was able to source a bottle of Maple Vinegar already made from a specialty store called Forbes Wild Foods as I used a combo of both Apple Cider and Maple Vinegar for this batch.

I use a maple balsamic all the time which I love, but it is the only maple vinegar I have ever come across. I know the base of balsamic is grapes which did grow wild here. Have you run across a lot of grape usage in the time period?
