Welcome to my channel where I show different recipes developed and tried by me. Today’s video is once such recipe Mutton Chukka, also known as Mutton Sukka or Mutton Dry, a dish that showcases tender pieces of mutton cooked to perfection with a blend of spices. Typically cooked with ingredients such as onions, tomatoes, curry leaves, spices and coconut as optional, makes it a delightful accompaniment not only to rice or flatbreads, but also to idiyappam , appam and neer dosa.
making it a popular choice for festive occasions and family gatherings.
So let’s get to the preparation. Hope u like it
In a pressure cooker, add 700gms to 1 kg of mutton, 1/2 tsp turmeric powder, 2 tsp coriander powder, 1 tsp Kashmiri red chilli powder, 1/2 tsp cumin powder, 2 tsp salt, 2 cinnamon pieces, 2 bay leaves, 3 cardamom pods, 5 cloves, pinch of fennel , 1 tbsp ginger garlic paste, 3 tbsp curd, 1 whole garlic pod, mix well and add 1/2 cup of water. Mix well. Do not add more water as mutton will also release its water. Let it marinate for 10 minutes and then Pressure cook until completely done
In a food processor, I have added 1 capsicum, 2 green chillies, 3 tomatoes and 2 onions
Pulse it for 10-12 seconds
Now this is ready, finely chopped just like salsa or kachumbar, I tried adding capsicum this time and it turned out amazing
Open the lid once the pressure is released and let me show u the mutton. Soft perfectly cooked and still juicy
In a kadai heat 60 ml oil
Once hot add 2 broken red chillies, curry leaves and I am
Also adding the cooked garlic pod. Fry for few seconds. The fried garlic flavour is gonna make this dish delicious
Then add the onion tomatotoe capsicum mixture, salt 1 tsp and mix well.
Cook it till it turns soft and dry on high flame
Remember to give a mix in between. Here u can see the onions and tomato have released water. Cooking it further till it turns soft and dry
Now here u can see the mixture is all dry and turned soft
To this I am adding 2 tbsp store bought tomato paste. This is a saviour and can be used to cook 100 plus variety of dishes. Gives a good base and texture for any dish, be it veg or non veg , has a tangy smoky flavour. Mix and cook until it is cooked well.
Then add the mutton pieces and since they are completely cooked gently mix well.
Once the mutton is covered well with the masala, add the stock, 3 tbsp of fresh grated coconut, if you don’t want to add coconut you can skip it, add few dill leaves or coriander leaves and mix well,
Gently stir fry on high flame, until the coconut is cooked and released its oil. Will take a minute or two.
Now this is done, let check.
wow looks yumm and tempting
The meat is soft, tender and juicy.
Turn off the flame and allow it to rest for 10 minutes for the meat to absorb all the flavour
Let’s serve this hot
