For tomato soup:
I use about 10 tomatoes, 1 clove of garlic, 1 yellow sweet onion, a carrot Italian seasoning, and red pepper. I roughly chop them, throw them in an oven safe dish with a good amount of olive oil mixed in, and cook at 400 degrees for 25 min. (or until they look roasted enough!). I then blend with a bit more olive oil and seasonings and keep warm on the stove. Feel free to add in a splash of cream as well!
