I tried his recipe. It is quite accurate and not difficult to make. The gateau tasted really good. I used kirsch for the cherries compote, which was a mistake on my part. I agree with him that it is better to use red wine - it will taste better and gives a nicer colour to the cherry cream. I will definitely make this again. Thank you for sharing this recipe.
