I store my 300+ dahlia tubers in my seed room as well. For that reason I don't start seeds in Jan. but start them Feb. 1st. I start my tubers at the same time, this means my dahlias are tall enough come May 1st to plant the 6" deep outside and still see green above the soil surface, that gives me earlier blooms. The cool weather flowers I start Feb. 1st go outside shortly after sprouting, I plant them and cover them with bottomless milk jugs or sheet of plastic held off the ground. This way they have sprouted, the roots get to start healthy growth, and as soon as it is warm enough for them to start taking off they do. The bottomless milk jugs do the same as the water containers you start in with the exception of letting me get them in the ground right away - once sprouted. For example, my sweet peas get started in the seed room Feb. 1st, but are planted out Feb. 23rd-ish under their milk jug domes.
Thanks for clearly labeling the date and growing zone. I often find useful videos on RU-vid, but without that crucial information, it is difficult to adapt the information to my zone and the current date.

I hope your winter sown seeds do better than mine did last year. Only a few types did well for me. I am just up the coast from you in Western Washington near the Canadian border. I know you can get Eucalyptus seeds at West Coast Seeds, which is a BC, Canada seed co. Since you are a PNW location, that might be worth a try, even though its across the border. They carry seeds that do well on the PNW.

I am already noticing it is very wet for this winter sowing method here, fingers crossed these flowers make it! Hello! I'm zone 8 so I'm very mild. However, I found this winter sowing guide from Empress of Dirt (love her blog). Here's the link: empressofdirt.net/winter-sowing/ She gardens in zone 6, which is more similar to your climate and recommends winter sowing plants that need cold stratification about 5-6 months before your last frost date. 👋 fellow flower grower here, I would not start those lisianthus outside using winter sowing methods. They are from the south states of America Arizona, Mexico etc and are originally a riverside plant. They like to be nice and warm consistently and humid or else they won’t sprout at all. Lisianthus also has a long growing season so if you want blooms you need them going quickly asap and then they need to be planted out before it gets too hot otherwise they will rosette. You’re not going to get the conditions where you live to sprout them outside (maybe if you lived in Texas etc) but this will just be a waste of that seed. If you’ve got heat mats bring them indoors and set them up under lights! If you want more info on growing lisianthus farmer Bailey has just done a terrific video on this and another RU-vid flower farmer (regenerative flower farming) has a very detailed video on how she grows her lisianthus but they won’t do anything from the winter sowing method even though they are a hardy annual they need a really warm start.
