去皮紫薯 2條(大約 250克左右)
細沙糖 70克
鹽 1/4 茶匙
椰漿 200毫升
粘米粉 20克
木薯粉 100克
60克新鮮白椰絲
1/4 茶匙鹽

70g castor sugar
1/4 teaspoon salt
200ml coconut milk
rice flour 20g
Tapioca flour 100g
60g fresh shredded white coconut

200克 紫薯(去皮,切塊,蒸熟)
加入100毫升椰漿打成泥
250克 麵粉
1湯匙木薯粉
100克糖
1/2茶匙鹽
2粒蛋
1茶匙食油
230毫升 清水

200~230 ml water

面粉 250g (過篩)
40g細砂糖
4g 酵母
牛奶 130g/ 清水 130g
Ingredients:
1 purple sweet potato (after peeling, about 100g)
250g flour (sifted)
40g caster sugar
4g yeast
130g milk/ 130ml water

材料:
200克 粘米粉
90克 細砂糖
600毫升水用來煮150克 紫薯(需要400毫升紫薯水)
4克酵母
1茶匙食用油
30毫升溫水
蒸盤塗油,【尺寸:17cm寬x 6cm高】

Ingredients:
200g rice flour
90g castor sugar
600ml water cook with 150g purple sweet potato
(400ml extracted water is needed)
4g yeast
1tsp cooking oil
30ml warm water

What is the difference using tapioca, rice and normal flour? Is it just the texture or taste? I never used tapioca for Kueh, but see a lot in Chinese,or peranakan kueh, I want to try, but wonder if it will be liking to my family.

請問傻大姐是去菜市買的紫番薯嗎?因為我每次去菜市都會留意但很少看到圓圓胖胖的,都是長長瘦瘦的紫薯。有的煮起來顏色沒那麼紫呢!
