In Hawai’i we cut the nakabone into pieces and sautè with seasoned flour and/or salt and pepper. Excellent with beer!

Leon Leon san hello there! To be honest I don't usually use them but head can be grilled and roe is often cut into few cm size then cooked with soysauce,mirin and sake☺️

Akira San quick question. Do we need to cure tuna like we did with salmon before we use it as sushi?

Sorry for the late reply Francis san! Tuna does not really need curing but if you only have a mediocre quality piece that is a little too soft - then curing helps... but make the curing time a little shorter :)

I would love to see “aging fish” techniques that can be done at home. I try to age hamachi for a few days last month …. Did not come out good.
