●What is the "Udo" Moutain vegetable?
This is a wild vegetable called "Udo" in Japan.
Udo with the bitterness of a wild vegetable and a unique flavor. It is a plant belonging to the genus Taranoki. Crunchy as crunchy, from bud to root,
A versatile wild vegetable because its stems and leaves can also be used for food.
The natural udo begins to come out around March, and harvesting begins in April. It grows around June, and the season for food is over. For this reason, the season is said to be around April to May, and cold regions such as Tohoku are expected to be around May to June. In some areas, there are few habitats, making it a valuable wild vegetable.
●What is “Sansai(山菜)”(Mountain Vegetables)?
"Seasons" are very important for Japanese cuisine.
After a long winter season, many kinds of wild vegetables grow in the mountains.
This is called Mountain Vegetable.
Wild vegetables are a valuable food in the rural village of Japan.
People eat young leaves and shoots of wild plants.
Wild vegetables have a good natural aroma and rich nutrition.

It's a mountain asparagus that mainly grows around Asia. Around the Mediterranean we have what Spaniards call esparagos trigueros.

@@samidu492 yes they are shoots of fern, have this Samoa..the other one shoots of starch plant, they grow wild on mountain in the island of Samoa😊

in english its a japanese spikenard and since they grow here, I would like to eat some shoots next spring, but what was the grainy stuff you added ? crushed black sesame ? it somehow looked more like poppy seed ….and the branch at 0:29 like a tara-no-me I guess it is in japanese, Japanischer Angelikabaum in german and growing near the udo in my garden

used to pick these wild (dureup) with my mom as a kid from the woods on our property. Ate them blanched with vinegar red pepper paste (gochujang). LOVE them!

@@HIRO2021 あっ、薄切りで5分程茹でて下さいね。1時間位漬かれば食べごろです。 自分は皮ごと5ミリくらいにスライスして食べます。

We don’t need remove any, but eating raw is too bitter. We usually eat as Tempura^_^

Why don't you identify each one with an English subtitle? Explain what other ingredients you are using when making a dish! I'm watching from USA with over 300 million residents. Some have been to Japan and will recognize the plant, however most are just like me, and have never been to Japan. The easiest plant I have found to recognize not only from here in USA, but in China and Japan is Fiddlehead's Fern aka Bracken! Everything that grows wild in your mountains does not grow here in USA!!

Hey Lynn, Why don't you write to him in Japanese!? There are over 120 million residents in Japan! Maybe they don't all have time or inclination to learn English in order to satisfy you? The plant is NOT a "fern." It is called "Udo" in Japanese - which he wrote in the title of the video. Hiro also writes its Latin name in response to several polite questioners (eg. those who don't expect the world to revolve around them).
