Goya Champuru is common known okinawan cuisine.
"Goya" means bittermelon and "Champuru" means all mixed. As I search,I'm not quite sure where word "Champuru" came from but it is okinawan dialect.
Bittermelon has a lot of good source of nutrients for your body such as fiber,vitamin C,folate,vitamin A and much more. For benefits, manage blood sugar levels,help digestive problems,help heart health,anti-aging,boost your immune system and more.
If you want to enjoy bittermelon but you wish it not bitter, before you cook you slice really thin and rub salt into the bittermelon and rinse with water helps to reduce bitterness.
*Ingredients*(amount I use)
Bittermelon (16oz water bottle size)
Carrots (half of bittermelon)
Onion (half of medium size)
eggs(two large)
Tofu (half of 19oz pack)
Spam(half can)
Hondashi powder(1tsp)
Soy sauce(1tbsp)
