玫瑰露醉雞翼
材料:
急凍雞翼一磅半
玫瑰露酒250毫升
冰糖200克
杞子30克
處理:
1. 雞翼,在底部輕手𠝹2刀,清水解凍。
2. 冰糖,洗乾淨,放煲內,加入清水150毫升,中慢火,慢慢煲滾至溶解,攤凍。
3. 雞翼解凍後,倒去水分,加入粗鹽一湯匙,乸15分鐘,去除雪味、腥味,及加入少許鹹味。
4. 雞翼已醃了15分鐘,一邊輕手揸出雞血,一邊用清水沖洗乾淨,擎乾水。
5. 預先準備冰粒。
烹調:
1. 大火在鑊內煲滾清水一升,加入:
a. 粗鹽一茶匙
b. 紹興酒20毫升
c. 老抽2湯匙
大火滾起。
2. 放雞翼落鑊,大火滾起,熄火,冚蓋,浸15分鐘。
3. 雞翼已浸了15分鐘,打開蓋,大火煲熟。
4. 預備一個玻璃器皿,加入冰粒及凍開水。
5. 雞翼,已完全滾起,表示已熟透,放入玻璃器皿內,至冰粒完全溶解。
6. 預備一隻碟。
7. 杞子,清水沖洗乾淨,放碟上。
8. 雞翼,排好在杞子上,同時倒去器皿中的水分。
10. 在雞翼內加入玫瑰露油100毫升及冰糖漿,封好保鮮紙,放入雪櫃內,浸6小時以上,或者一晚。
8. 完成,夾起雞翼及杞子,放上碟。
9. 剩下的玫瑰露酒,倒入玻璃器皿內,放雪櫃儲存。
10. 可享用。
Drunken chicken wings with rose liqueur
Ingredients:
Frozen chicken wings 1.5 lb
Rose liqueur 250ml
Rock sugar 200g
Wolfberries 30g
Preparation:
1. Chicken wings, lightly cut twice at the bottom. Defrost in tap water.
2. Rock sugar, rinse with tap water. Put in a pot. Add in 150ml of water. Medium flame, heat it up until it totally melts. Wait for cooling down.
3. Chicken wings have been defrosted, pour away water. Add in 1 tbsp of cooking salt, season for 15 minutes, to remove unpleasant smells and add some salty tastes to them.
4. Chicken wings have been seasoned for 15 minutes, lightly squeeze the blood. Rinse thoroughly at the same time. Drain.
5. Prepare ice cubes in advance.
Steps:
1. Heat up 1L of water at high flame in wok. Add in:
a. Cooking salt 1 tsp
b. Shaoxing wine 20ml
c. Dark soya sauce 2 tbsp
Heat up at high flame.
2. Put the wings in the wok. Heat up at high flame. Turn off fire. Cover up the wok. Soak for 15 minutes.
3. The wings have been soaked for 15 minutes, open the cover. Boil well at high flame.
4. Get ready for a glass ware. Add in iced cubes and cold boiled-up water.
5. The wings have been boiled up, that means they are totally well. Put in the glass ware, until the iced cubes have been totally melted.
6. Get ready for a plate.
7. Wolfberries, rinse with tap water. Put on the plate.
8. The wings, put in rows on the wolfberries. Pour away the water in the ware at the same time.
10. Add in 100ml of rose liqueur and the rock sugar syrup in the wings. Cover up with cling wrap. Put in refrigerator and soak for 6 hours or more.
8. Complete. Pick up the wings and wolfberries. Put on a plate.
9. The remaining rose liqueur, pour into a glass ware and store in refrigerator.
10. Serve.
