「牛墟」是古早農業社會牛隻交易的場所，台灣最有名、較具規模的「牛墟」，是約在1870年左右就開始交易的善化牛墟。
舉凡農家常用的各式引擎、種苗、小雞鴨鵝、各式花木、蔬果雞鴨魚肉，還有竹編的籃子笸籮、不鏽鋼鍋具、手工掃把生活用品應有盡有，非常熱鬧。
此外牛墟美食也具有高人氣，新鮮美味的清燙牛肉與各式牛肉熱炒最受老饕歡迎。就因善化牛隻屠宰場的規模為台灣最大，也讓台南市的溫體牛肉湯特別知名。
