端午节香菇鸡肉粽 Dragon Boat Festival’s Chicken Dumplings

材料:
蒜米 1粒
香菇 10个(浸泡3小时)
咸蛋黄 10粒
小葱 10粒
栗子 10粒(浸泡3小时)
虾米 100g
眉豆 200g(浸泡3小时)
糯米 600g(2小时)
竹叶、草绳(隔夜)
鸡腿肉 3个(腌制30分钟):
- 生抽 1汤匙
- 蚝油 2汤匙
- 黑酱油 1/2汤匙
- 糖 1茶匙
- 鸡精粉 1茶匙
- 胡椒粉 1/2茶匙
- 素G粉 1/2茶匙
糯米调味料:
1汤匙糖,1茶匙素G粉,1茶匙盐,1茶匙五香粉,1茶匙胡椒粉,1/2汤匙黑酱油
馅料:
(1)葱油:热油炸小葱,捞出后,油备用。
(2)虾米:热葱油,爆香虾米。
(3)香菇:热葱油,爆香蒜米,倒入香菇炒香,加入100毫升水焖软。
(4)腌肉:热葱油,爆香蒜米,炒香腌肉。
(5)栗子:热葱油,爆香蒜米,倒入栗子,1汤匙蚝油及250毫升水。煮滚后转F6焖5分钟。
(6)眉豆:水煮滚后倒入眉豆煮软,捞出。热葱油,爆香蒜米,倒入眉豆和1茶匙素G粉,炒香。
做法:
1.腌肉30分钟。
2.备好裹粽子的馅料。
3.热葱油,爆香蒜米,倒入糯米及调味料炒香。再倒入眉豆,炒匀,备用。
4.取2张粽叶,先放入1/3糯米,加入香菇、腌鸡肉、虾米、咸蛋、栗子,再放入2/3糯米包成三角形粽子,用草绳绑好。
5.用快锅,5公升水放入1汤匙盐煮滚后,放入粽子,上盖煮至排气,转F10煮35分钟。
Ingredients :
Garlic 1
Mushrooms 10 (soak 3 hours)
Salted egg yolks 10
Red onions 10
Chestnuts 10 (soak 3 hours)
Dried shrimps 100g
Black eye beans 200g (soak 3 hours)
Glutinous rice 600g (soak 2 hours)
Bamboo leaves & grass strands (overnight)
Chicken whole legs (marinate 30 minutes):
- Soy sauce 1 tbsp
- Oyster sauce 2 tbsp
- Black soy sauce 1/2 tbsp
- Sugar 1 tbs
- Chicken bouillon 1 tbs
- Pepper 1/2 tbs
- Vegetarian seasoning powder 1/2 tbs
Rice seasoning:
1 tbsp sugar, 1 tsp vegetarian seasoning powder, 1 tsp salt, 1 tsp five spice powder, 1 tsp pepper, 1/2 tbsp dark soy sauce
Fillings:
(1) Scallion oil: Heat oil to deep-fry shallots, remove fried shallots and the oil set aside.
(2) Dried shrimp: Heat shallot oil, saute dried shrimp.
(3) Mushrooms: Heat shallot oil, sauté garlic and mushrooms, then add in 100ml water and simmer until mushrooms are tender.
(4) Marinated chicken: Heat shallot oil, saute garlic and then stir fry marinated chicken.
(5) Chestnuts: Heat shallot oil, saute garlic, add in chestnuts, 1 tbsp oyster sauce and 250ml water. Bring to a boil, then turn heat to F6 braised for 5 minutes.
(6) Place beans in pot, cover with water and bring to a boil until beans are tender, remove. Heat shallot oil, sauté garlic, stir fry beans with 1 tsp vegetarian seasoning powder.
Method:
1. Marinate chicken for 30 minutes.
2. Prepare all fillings for wrapping dumplings.
3. Heat shallot oil, saute garlic, then stir fry glutinous rice with seasoning. Then add in black eye beans, stir well and set aside.
4. Take 2 leaves and bend to form a cone, filling 1/3 glutinous rice, add in mushrooms, marinated chicken, shrimp, salted egg, chestnuts, and then cover with 2/3 glutinous rice. Fold over the leaves and wrapped the edge of leaves into a triangle, tied with grass strands.
5. Pour 5 liter water and 1 tsp salt into Pressure Cooker and bring to a boil, then place dumplings inside the pot. Cover the lid and cook until gas released, turn to F10 and cook for 35 minutes.
