12th Annual Japanese Food & Restaurant Show @ Mutual Trading Co, LA, Calif., Oct 22, 2000:
Every year, Hocho (Japanese for "kitchen knife") Master Hirano from Tokyo's Tsukiji Masamoto knife company gives a demo and lectures on knife-sharpening and care, then he personalizes the knives that customers purchased by skillfully etching their names on the knives with only a hammer and a chisel. The engaging demo and seminars are always a popular crowd-pleaser. Mr. Hirano is an extraordinary craftsman, and this video is in real-time. The speed at which Mr. Hirano works is not enhanced. He is really super-fast, with a delicate touch and an eye for perfection!

I sharpened my first two knives today, and it is really hard technique-wise. Keeping consistency is extremely difficult, though like most things practice makes perfect. Just need to keep at it. Anyway, I love seeing master sharpeners working on a blade.

Mr. Hirano is the CEO, or president of Tsukiji Masamoto Knife Co. in Tsukiji, Tokyo, Japan. He is the seventh-generation owner of Tsukiji Masamoto Knife Co. Since age 15, the time he entered this company, he has devoted his entire life to every aspect of the business. He has to be around 68 now. I own several Tsukiji Masamoto knives he personally engraved w/a chisel and a hammer. He is a consummate craftsman. Please see link in video description for more info of the company.

What would have been really interesting what be to take an angle cube or protractor and measure the angle and consistency he sharpens at. I bet you that someone like him who is that experienced and good at hand sharpening would stay within a space of only a few degrees at the very apex.

I believe they are referring to a knife with Super Blue Carbon. Some Japanese Carbon Steel knives use White carbon, Blue carbon, or Super Blue carbon

I can't tell you the specifics of the one he's using but it's called a whetstone as far as i know.
