我们之前分享了紫薯小蛋糕,今天要帮它穿上紫色的果冻大衣,让它摇身变成紫薯千层蛋糕。加了果冻的紫薯蛋糕,颜色更加迷人味道也升华了。满满的紫薯香味,吃起来很冰凉爽口,很适合炎热的夏日呢。喜欢紫薯的朋友一定要试试看哦。
蛋糕体
做法以及食谱都和紫薯小蛋糕一样,只是换成了7寸的圆形模具和蒸的时间要拉长到55分钟。蒸好脱模后要晾凉至少1个小时,等蛋糕体稳定后才能切片。这个份量可以切成4片,不过我只选3片比较美的来用,模具也放不下了。所以剩下那一片就留着净吃吧。

果冻层
果冻层的制作和之前分享的香兰千层蛋糕做法极为相似。只不过这次因为紫薯有很多纤维的关系,所以要用比较多的果冻粉。不然,凝固后吃起来会像咖椰那样的口感而不像果冻。而且也会比较难脱模。
果冻粉加多一些,吃起来就会很Q弹爽口。不过加多了果冻会比较浓稠,流畅度没那么好,所以在分层时确保将边边的缝填好后才进行下一片。除此之外,它也会比较快凝固,所以需要煮开一锅水来保温,减缓果冻的凝固时间。这样才有比较充足的时间制作蛋糕分层。想知道更多制作这款蛋糕的心得,可以去看看香兰千层蛋糕的视频,就不在这里罗嗦了。

- 120克 紫薯泥
- 80克 低筋面粉
- 70克 牛奶 (20g奶粉+50g水)
- 50克 玉米油
- 40克 细砂糖
- 几滴柠檬汁/白醋
- 少许盐
果冻层 (打汁)
- 100克 紫薯 (可在Shopee购买 : shp.ee/jdxp5ka)
- 200克 椰浆
- 200克 清水
- 40克 玉米粉
果冻层(煮)
- 400克 清水
- 60克 细砂糖
- 10克 蒟蒻果冻粉(一包)(可在Shopee购买 : shp.ee/ebrtugg)
- 2片 香兰叶

Cake Base
The method and recipe are the same as the steamed purple sweet potato cupcakes, except that it is replaced with a 7-inch round mold and the steaming time is extended to 55 minutes. After being steamed and unmoulded, let it cool for at least 1 hour, and wait until the cake base is stable before slicing. This amount can be cut into 4 slices, but I only choose 3 more beautiful slices to use, and the mold also can’t fit in 4 slices. So save the remaining slice and eat it.

我做成功了,果冻比较淡,我加多20gm细糖,就有了紫薯味道了,因为家没有绿豆粉,就把印尼绿豆粉换成玉米粉,一样成型,谢谢老师的食普,你好棒🎉

好奇怪為甚麼我同樣的配方,一樣的深紫薯但是做起來是像水泥色,尤其蒸好後經過幾個小時完全是水泥色。

你好,我没用活低模做过哦。不过是可以的,也可以用作慕斯蛋糕的圈来做,但是防漏要做好功夫。是的,用一样尺寸,因为蛋糕脱模后会收缩一些。

Yes, no baking powder needed. Normally the problem is collapse not didn't rise, you can monitor the baking or steaming progress. The mold, meringue, baking or steaming temperature might cause it collapse.

蒟蒻是植物来的。可以用你喜欢的果冻粉,不过分量可能需要自己再做调整,因为不同粉的口感和用量会有点不一样。

脱盘的话,做3粒蛋的份量就好了,还有用脱盘模作的话表面可能会有瑕疵。果冻太糊很难脱模的,所以我这次分享的就用比较多用果冻粉。

Sis, for the egg whites, beat at stiff peaks and then add the purple sweet potato paste and did you add the flour last time? that means stir in the egg white bowl earlier.

Hi, use the same size. Because cake will become smaller after cold. btw, if you like more jelly you can use larger size tray to make the jelly.

All teachers will share that to add in eggs one by one slowly combined into beaten butter sugar. I cannot get it right!.. I seemed to get the batter curdles... I always give up. Can u pl share how? 可以的,不过表皮的紫色会变褐色罢了。可以用摄氏150度烤60分钟,请根据你烤箱的脾气再自行做调整哦。

Can I use gelatin because we don't have konyaku powder in my country. How many grams of gelatin do I replace the konyaku with?

Hi dear, logically can. But I not familiar with gelatin, I can't give your the proper amount. You can try to use gelatin to make the purple sweet potato jelly first. If the result is good enough, then you can use your recipe go for the whole cake.

不放椰浆可以用牛奶或豆奶代替,或者直接用水也可以。但是,味道会不一样哦。
