八年前我在北京吃过全聚德的北京烤鸭，那简直太棒了！ 有八年没有吃过了，我住在纽约，每次路过法拉盛缅街上的烤鸭店，透过橱窗能看到里面焦嫩的烤鸭，我快走几步，我不敢去尝试购买，我怕这个杂牌 毁了烤鸭在我内心深处的味道

Jay:主要造烤鸭程序，鸭肉与皮分离。煮一窝开水泡浸，以秒算下窝上窝十数次，再从鸭脖子引入管子吹气，从表面看见至到鸭身皮鼓起才腌制。

饼皮可以用市售饺子皮涂上油，几张叠在一起擀大一倍，然后一起蒸可以很容易分开。真味的北方饺子皮就很适合这么弄，节省一些时间。
