Chai Boey is a popular dish in Chinese Malaysian homes.
The delicious taste of the soup comes from the 'roasted flavour' of roasted meat ingredients (can use any kind of roasted meat such as roasted pork, roasted duck, roasted chicken, etc)
The roasted meat are stewed in big pot with mustard greens (芥菜)
Some people may blanched the mustard green before put it into the soup to remove the distinct taste of the mustard green, but I do not do it that way because the nutrition comes from the vegetable will just being thrown away and it become tasteless vegetable.
Adding tamarind juice & chillies into the soup...enhance the sourness & spiciness of the soup, which makes the soup so flavourful.
